Getting the recommended amount of daily dietary fiber is no small task. For adults, the recommended daily intake of fiber is 25 to 38 grams. However, according to the Academy of Nutrition and Dietetics, most Americans only get about half that amount.1 Now, you may think that in order to get closer to this recommendation, you would need to add tons of broccoli and brussel sprouts to your meal plans. While incorporating more veggies into your diet is never a bad idea (and there are plenty of tasty ways to do so), why not get a little more creative?
This delicious play on cheese toast is packed with fiber to start your morning off right.
Begin with two slices of whole grain bread. Brush with olive oil and toast to your liking. Next, combine 4 oz of goat cheese with 4 oz of cream cheese until smooth. Spread your cheese mixture on the toast. Add sliced peaches and a drizzle of honey (about a teaspoon should do). Sprinkle with a dash (1/4 teaspoon) of black pepper and enjoy!
