Stuffed Apple with Steel-Cut Oatmeal
After you take your Instagram pics at the apple orchard, try this twist on a classic fall favorite. Apples and oatmeal are both great sources of fiber. Boil 4 cups of water with 1 cup of steel-cut oats. Add a little bit of cinnamon and nutmeg to taste. Turn the heat to low and cook covered oats for 20 minutes. Core an apple and funnel the oatmeal into the middle. Bake for 10 minutes at 350 degrees, making sure the apple is tender. This is sure to be your new fall favorite, fueling your body with fiber and filling your home with the sweet smell of baked apples!
Pumpkin Yogurt Dip
Nothing says fall quite like the taste and aroma of pumpkin! This superfood is a tasty way to add more fiber into your diet. Combine a half can of pumpkin puree and a half cup of non-fat vanilla Greek yogurt. Next, add in a teaspoon of honey, and some cinnamon and nutmeg. Get out your graham crackers and apple slices and dig in!
Almond Butter and Pumpkin Seeds Rice Cake Spread
