Craving something hearty and delicious that also helps you reach your daily fiber goals? Well, you have come to the right place! High fiber meals don’t have to be just grain bowls and oatmeal (delicious as those may be). This family-friendly take on a classic baked potato takes about half an hour to prepare and will have your whole family saying “mmmm.” This unlikely combination of textures and flavors is a healthy and delicious way to mix things up at breakfast, lunch, or dinner!
- Bake your sweet potatoes at 350° for 15 to 20 minutes.
- Once cooked, slice and score
- Add 2 tablespoons of peanut butter (or your favorite nut butter!) to each sweet potato
- Add banana slices and chia seeds
If someone in your home has a peanut allergy, or if you just prefer almond or cashew butter, experiment with those ingredients instead. When it comes to making healthy meals at home, the key is making it fun!
